Divide the venison breakfast sausage into 6 equal portions. Place each portion between two sheets of parchment paper and flatten into thin patties. Shape into squares if using sandwich bread.

Place slices of cheddar cheese onto 3 patties, leaving a small border around the edges. Top with the remaining patties and firmly pinch the edges together to seal.

Heat a skillet over medium heat and cook patties 4–5 minutes per side, or until fully cooked and cheese is melted.

Toast the bread and cook the eggs to your preference. Spread mayonnaise on the bottom slice of toasted bread. Add the cheesy sausage patty, then top with an egg and a slice of Colby Jack or cheddar cheese.

Add the top slice of bread, cut in half, and enjoy hot.
