In a large skillet over medium-high heat, cook the ground venison until about halfway browned, breaking it apart as it cooks.

Add the diced onion and continue cooking until the venison is fully cooked and the onion is softened. Drain excess grease if needed.

Stir in the minced garlic and cook for 1 minute. Add the taco seasoning and fire-roasted tomatoes.

Reduce the heat to low. Stir in the cream cheese and sour cream, and mix until smooth. Add the green chilis and shredded cheddar cheese, stirring until the cheese is fully melted and creamy.

Adjust seasoning with salt, pepper, and cayenne if desired, and stir in chopped parsley or cilantro. Serve hot, garnished with extra cheese and herbs, alongside tortilla chips or toasted tortillas.
