In a large bowl, add the ground venison, diced onion, jalapeno, Worcestershire sauce, shredded Colby Jack cheese, and BBQ rub. Mix until everything is well combined.

Add the filling to a large zip-top bag and cut a small hole in one corner to make it easier to fill the shells. Pipe the venison mixture into the manicotti shells. This recipe makes enough filling for about 16 oz of manicotti shells, or two boxes.

Wrap one piece of thick-cut bacon around each filled shell, then place the shells on a tray. For the best texture, cover the wrapped shells and let them sit overnight in the refrigerator. This helps soften the pasta before cooking. If you do not have time to let them sit overnight, boil the manicotti shells for about 2 minutes before filling to help soften them.

Oven Method • Bake at 350°F for 50 minutes. Brush with BBQ sauce, then bake for another 10 minutes, or until the bacon is cooked and the sauce is set. Grill / Charcoal Method • Cook over charcoal until the bacon is almost done. Push the coals to one side and finish the shells over indirect heat. Brush with BBQ sauce and continue cooking until the bacon is cooked through and the shells are tender.
