Cook the venison breakfast sausage in a skillet over medium-high heat until fully browned, breaking it apart as it cooks.

Stir in the drained fire-roasted tomatoes, cream cheese, Cajun seasoning, parsley, and black pepper. Mix until the cream cheese is melted and everything is well combined.

Roll out each crescent dough sheet and spread an even layer of the sausage mixture over each sheet.

Roll each sheet up like a cinnamon roll. Using string or unflavored dental floss, slice the rolls into even pieces.
