Slightly freeze the turkey breast, then grind it for the best texture.

In a bowl, combine ground turkey, scallions, ginger, garlic, brown sugar, sesame oil, soy sauce, Shaoxing wine, salt, and white pepper. Mix thoroughly until well combined.

Lay out wonton wrappers and place a small spoonful of filling in the center of each. Make sure not to overfill, or filling will come out.

Lightly wet the edges with water, fold, and seal tightly. Place dumplings in a steamer basket.

Steam for 12–14 minutes, or until fully cooked through.

Serve hot with your favorite dumpling sauce. Try dipping in a mix of dumpling sauce and red chili oil for extra heat.
