Wild Turkey Cajun Pasta

Butterfly your wild turkey breast, then season generously with Cajun seasoning and black pepper and set aside.

Bring a pot of salted water to a boil and cook your penne pasta until al dente. Drain and set aside.

Heat a large skillet over medium heat and brown the sliced venison andouille sausage. Once browned, remove from the pan and set aside. In the same skillet, add the seasoned wild turkey breast. Cook until browned on one side, then flip and add 2 tbsp of butter. Continue cooking until the turkey is fully cooked through. Remove and let rest.

In the same skillet, add diced onion, celery, and bell pepper. Sauté until softened, about 5–6 minutes. Add minced garlic and sauté for another minute until fragrant.

Deglaze the pan with chicken broth, scraping up all the flavor from the bottom of the skillet. Reduce the heat to low and pour in the heavy cream.

Add parmesan cheese and pepper jack cheese, stirring until fully melted and combined. Season the sauce with Cajun seasoning, garlic powder, onion powder, paprika for color, and black pepper to taste.

Add the browned sausage back into the sauce along with the fresh parsley. Mix well, then add the cooked penne pasta and toss until everything is fully coated in the creamy Cajun sauce.

Slice the wild turkey breast. Serve the pasta in bowls topped with sliced turkey and extra parmesan cheese. Enjoy!
