Cook the ground venison in a skillet over medium heat until fully browned, using a meat chopper to break it into very small crumbles for the best texture. Remove from the heat and place the cooked venison in the refrigerator or freezer until cooled to room temperature.

In a large bowl, combine the shredded cheddar cheeses, softened cream cheese, diced pimentos, mayonnaise, Cajun seasoning, salt, and pepper. Mix until well combined. Fold in the cooled ground venison until evenly incorporated.

Form the mixture into golf ball-sized balls and place them in the freezer for 20 minutes to firm up.

While the balls chill, prepare three breading stations: Dredge Bowl 1: Flour mixed with Cajun seasoning. Dredge Bowl 2: Eggs beaten with salt and pepper. Dredge Bowl 3: Breadcrumbs mixed with Cajun seasoning, garlic powder, onion powder, dried parsley, salt, and pepper.

Coat each ball in the seasoned flour, then the egg mixture, and finally the seasoned breadcrumbs, pressing firmly so the coating sticks.

Heat frying oil to 325°F. Fry the pimento cheese balls for 3–5 minutes, or until golden brown and crispy. Remove to a wire rack or paper towel-lined plate and serve hot.
