Cut the ends off the onions, peel away the outer skin, and make one slice from the outside to the center of each onion (do not cut all the way through).

Boil the onions for 12 minutes, then remove and let cool until they are comfortable to handle.

In a large bowl, combine the ground venison, breadcrumbs, diced onion, jalapeño, pepper jack, cheddar, cream cheese, Worcestershire sauce, and Cajun seasoning or BBQ rub. Mix until well combined.

Peel off individual onion layers. Place a spoonful of filling inside each layer, then roll the onion around the filling to form a ball. Repeat until all the filling has been used.

Wrap each onion bomb with bacon, using half a slice or a full slice as needed. Secure with a toothpick. Season the outside with BBQ rub.

Cook at 350°F over indirect heat for 45–60 minutes, or until the bacon is crispy and the internal temperature reaches 160°F. I cooked mine on a charcoal grill over indirect heat since I don't have a smoker, but a smoker or oven works great as well. For oven, bake at 350 for 45-60 minutes.

Brush with BBQ sauce and cook for an additional 10–15 minutes until the sauce becomes sticky and caramelized. Serve hot and enjoy!
