Season the venison roast generously with salt, pepper, and garlic powder. Heat a little oil in a pan over medium-high heat and sear the roast on all sides for 3–4 minutes per side until browned.

Place the seared roast into the Instant Pot. Add the sliced onion, minced garlic, beef broth, banana pepper juice, Italian seasoning, and an extra pinch of salt and pepper. Close and seal the lid, then cook on the Meat/Stew setting for 60–75 minutes, depending on the size of the roast. If using a slow cooker, cook on low for 6–8 hours until tender.

Once the venison is fully cooked, remove it from the pot and shred with forks. Set aside.

Add the cubed cheddar cheese directly into the hot cooking liquid and stir until melted and smooth. Add the banana peppers and roasted red peppers, then return the shredded venison to the pot and mix until everything is evenly coated.

Slice the hoagie rolls and spread a thin layer of mayo on the inside. Toast in a skillet or oven until golden and lightly crisp.

Fill the toasted rolls with the cheesy venison and pepper mixture. Cut in half, dip into the extra juices, and enjoy.
