Parmesan Crusted Venison

Clean and butterfly the backstrap to about ½ inch thick.

Season lightly with SPG blend.

Sear on high heat for 1 minute per side and remove.

In a bowl, mix mayonnaise, 3 oz parmesan, mozzarella, parsley, and Creole seasoning to taste.

In another bowl, mix melted butter, breadcrumbs, and Italian seasoning.

Place the venison on a rack in a pan. Spread the parmesan-mayo mixture on top.

Add the buttered breadcrumb mixture over that.

Broil on high until the top is golden brown.

Remove and let rest for 5 minutes before enjoying.
