Sear venison cubes and all sides, then remove from the pot.

Add tomatoes, onion, garlic, and dried chilis to the pot (soften over medium heat)

Add water and simmer until peppers are fully soft.

Remove peppers, tomatoes, onion, and garlic and add to a blender. Blend until smooth.

Pour sauce back into pot, add venison, spices, bay leaves, vinegar, and cinnamon. Simmer on low for 3 hours.

Shred meat and mix with a little consomé.

Build tacos: dip tortillas in consomé, fill with cheese + meat, crisp on skillet, top with onions & cilantro.
