Preheat oven to 375°F.

In a skillet over medium heat, fully brown the venison breakfast sausage. Remove and set aside. In the same skillet, sauté the diced onion and bell pepper for 2 minutes.

Add minced garlic and cook for 1 more minute, then add mushrooms and spinach and cook until spinach is wilted.

Use paper towels to soak up excess liquid from the pan. Season the vegetable mixture with Creole seasoning and set aside to cool slightly.

In a large bowl, whisk together eggs and milk. Season with salt, pepper, and Creole seasoning. Add cooked sausage, spinach mixture, and shredded cheddar cheese. Mix well.

Divide the mixture evenly between the two pie crusts. Smooth the tops and sprinkle evenly with grated Parmesan cheese.

Bake uncovered for 50 minutes, or until set and lightly golden.

Let rest for 10–15 minutes before slicing and serving.
