Slice wild turkey into nugget-size pieces. Add to bowl with buttermilk, pickle juice, hot sauce, and Cajun seasoning. Mix and refrigerate at least 30 minutes or overnight.

Mix flour, Cajun seasoning, salt, and pepper in another bowl. Drain the turkey and coat it in flour, packing it well.

Place on a wire rack and rest 5-10 minutes. Heat oil to 350°F and fry until golden brown. Remove and drain on paper towels.

Toss nuggets in buffalo sauce. Toast bread rolls if desired. Spread mayo on both sides.
