Butterfly wild turkey breast, taking out tendons and slice into thin slider-size pieces.

Add turkey to a bowl with buttermilk, jalapeño juice, hot sauce, and Cajun seasoning. Mix well and refrigerate at least 30 minutes or overnight.

Mix flour, Cajun seasoning, salt, and pepper in another bowl.

Drain turkey and coat in flour, packing well. Place coated turkey on a wire rack and rest 5-10 minutes.

Heat oil to 350°F and fry until golden brown. Remove and drain on paper towels

Mix 1 cup hot oil with brown sugar, paprika, garlic powder, salt, pepper, and cayenne. Toss or brush turkey in Nashville hot oil

Mix mayo, hot sauce, salt, and pepper for spicy mayo

Build sliders with turkey, pickles, and spicy mayo. Serve hot and enjoy!
