Add ground venison to a bowl and season with SPG or your favorite burger seasoning. If using straight venison, add the minced bacon and mix until well incorporated.

Divide into 4 equal portions and form into loose quarter-pound balls. Heat a skillet or griddle over medium-high heat.

Place each ball onto the hot surface and smash flat. Season with a little extra salt and cook until about 75% done. Fllip, top with cheddar cheese, cover, and cook until the cheese is melted and the burger is fully cooked. Repeat with remaining patties.

Wash potatoes and cut into fries. Soak in an ice bath for at least 15 minutes. Drain and pat completely dry. Heat oil to 250°F and fry the potatoes until softened but not browned. Remove and let cool.

Increase oil temperature to 350°F. Fry the potatoes in batches until golden brown and crispy. Transfer to a wire rack and season immediately with salt.

Place fries in a large bowl, drizzle with truffle oil, Parmesan cheese, and fresh parsley. Toss until evenly coated.

Combine mayonnaise, lemon juice, garlic, parsley, salt, pepper, and garlic powder in a bowl. Mix well and refrigerate until ready to serve.

Build your burgers with your favorite toppings. Serve alongside the truffle Parmesan fries and garlic aioli for dipping.
